I've decided to have a lazy day and you know what? I think I'm actually cool with it.
The bed sheets need changing, the bath and sink need a Jif-over and the floors could do with a mop, but meh, not today. I'm chucking a sickie on housework. The OCD clean freak side of me can just FREAK OUT..... I'm gonna scoff another one of these cinnamon scrolls and watch an episode of OITNB while Clementine is having a sleep. Day sleeps won't last forever so I may as well enjoy this time while I have it! Hush now pile of dirty clothes, I need to hang out with Crazy eyes.

Ha! As soon as I finished typing that last sentence I literally hear faint cries of "Mom! Mom!" Lets just say Clementine's cries were due to her doing something overdue, epic and quite, quite smelly. Oh dear. Who am I kidding.......motherhood is the new black.
CINNAMON APPLE SCROLLS
Filling:
2 medium apples, peeled and diced
1 tablespoon unsalted butter
1 teaspoon caster sugar or maple syrup
4 tablespoons unsalted butter, room temperature
1/2 cup brown sugar
3 teaspoons ground cinnamon
Dough::
2 cups plain flour
2 teaspoons caster sugar
3 teaspoons baking powder
1 teaspoon salt
3 tablespoons unsalted butter, melted
1/2 cup plain Greek yogurt
1/4 cup milk
1 egg
Glaze (optional):
3 tablespoons butter, melted
3 tablespoons maple syrup
2 -3 teaspoons milk
1 cup icing sugar
Preheat oven to 200C degrees.
Grease or line with baking paper a 20cm x 30cm sized baking pan.
Filling:
Place apples, butter and sugar in a medium sized saucepan or deep sided skillet and saute apples for about 5 minutes.
Set aside to cool.
In a small bowl mix the butter, sugar and cinnamon and til combined but still a bit lumpy.
Sat aside.
Dough:
Mix flour, sugar, baking powder and salt in a medium bowl.
In a small bowl, gently whisk melted butter, yogurt, milk and egg.
Add the liquid mixture to the dry ingredients and mix with a wooden spoon or silicon spatula mix until it is well combined.
Scrape out the dough onto a well floured bench top.
Sprinkle more flour on top of the dough (the dough is quite sticky) and gently roll out into a rough 15cm x 20cm rectangle.
Sprinkle both the apples mixture and then the cinnamon mixture on top of the dough.
Roll up the dough log-style.
Cut 1-inch slices and place them in the prepared dish, leaving a little bit of space between each roll.
Bake 20 to 25 minutes, or until the rolls are a nice golden brown.
The scrolls can be left 'naked' and are always best eaten warm and with friends!
But if you wish to make them even more mooooorish you can add a delicious maple glaze.
Glaze:
In a small bowl mix all ingredients together until smooth, adding more milk if needed.
Drizzle over the warm rolls and serve.
Best eaten the day they are baked but can be stored (if there are any left!) in an airtight container for 2-3 days.
