MUFFINS FOR A VERY VERY MAD WORLD

Just as I wrote on Instagram the other day - The world has gone mad.
I feel overwhelmed by the ooze of hatred within our world. I see footage of Syrian children crying and shivering from fear of another air strike. I read in the paper about another mass killing that is labelled all too quickly a terror attack. And I can not unsee the images from the report four corners did about Don Dale.
WHAT THE HELL IS GOING ON?
Where is our compassion?
Where is our humanity?
We may as well be living in another time - Is winter coming?
Why am I seeing stupid posts saying "We stand with Sonia Kruger. Boycott Target" Dudes! Sonia the racist will be just fine. But these kids, these victims of war, of abuse and of hate won't be. So may I suggest you stand with them and perhaps donate your Target spending money here?

Oh I am so mad -so very very mad.
I'm sick of this shit and so here are some shitty muffins, that will in turn give you the shits.....but in a good way. Yes, lets all be in a good way. Let's stop being so hateful and fearful and let us start being wonderful- to one another. Acceptance, compassion and some Banana and Prune Muffins.

MAD WORLD MUFFINS

makes approximately 12 muffins, I doubled the recipe and freeze most of them for lunchbox treats.

2 bananas
1 egg
1 teaspoon vanilla extract
1/4 cup milk (almond/dairy/coconut)
1/4 cup oil (vegetable/olive/sunflower)
1 1/4 cups self raising flour (can be a mixture of white and wholemeal- whatever you fancy)
1/4 maple syrup / coconut sugar / brown sugar
2 tablespoons cacao powder
1/4 shredded coconut
1/3 cup of dried prunes roughly chopped (I cut mine with scissors directly into the mixing bowl)

Pre heat oven to 180C deg.
Prepare a 12 hole muffin tin with liners or grease and flour well.
In a large mixing bowl mash bananas well.
Add egg, vanilla, milk and oil and whisk together.
Using a wooden spoon or spatula stir in the dry ingredients until just combined.
Fold in the prunes, do not over mix.
Using an ice creams coop or soup spoon dollop the mixture into the holes until 3/4 full
Bake in oven for 20-25 mins.
Cool in tin for about 5 minutes then either eat warm or turn out onto a cooling rack.
Muffins will keep for about 3 days and can be frozen for up to 3 months.
